Game Day App & Drink ideas

Well, the Broncos have continued to provide us with some high quality game time and we had to have drinks and apps that lived up to their standards.  The spiked ciders were a real hit with the ladies and the pizza rolls and wing cups were a definite touchdown with the guys!  I would have to say we had an overall victorious Sunday :)

Spiked Cider!
(serve cold OR hot)
one shot of spiced rum
6oz. apple cider

Pizza Rolls with Marinara Dipping Sauce

unroll wholewheat low-fat premade Pillsbury Crescent Rolls
and put 3 pepperoni slices on the larger end of each roll

Place half a stick of low-fat mozzarella string cheese on top of the pepperonis

Roll up the crescents and bake according to the Pillsbury package directions

Wing Cups

Fill the bottom part of each small glass with your choice of yogurt ranch or reduced fat blue cheese
and then place 2 hot wings into each dip filled glass

"Frishdee"

This is one recipe that I adapted from my mother in law, that is one of Prescott's all time favorites.   I, of course, made it healthier and added some new twists to it :)  

It is a quick and easy Fall dinner, very comforting and hearty.  It can also be made vegetarian without the ground turkey!  Enjoy :)

I am using left over mashed potatoes, canned corn and frozen creamed spinach 
(to make things easy for weeknight cooking!)
heat all of them up in the microwave until nice and warm

In the mean time bake 1 pre-made, refrigerated pie crust at 350 for 10 minutes with lots of fork pricks in it to prevent air pockets.

Brown 3/4 to a full package of lean ground turkey adding lots of rosemary, salt, pepper, garlic and onion and then add it to the pre-baked pie crust.

Top the fully cooked ground turkey with your warmed canned corn.

Then add the warmed creamed spinach layer.

Top with the mashed potatoes (that have been fully seasoned with plenty of salt, pepper, butter, milk, garlic and rosemary)

Fully cover with your choice of cheese, I used naturally smoked provolone.

Bake at 350 for 10 more minutes and then broil for up to 5 minutes until the cheese is all bubbly.

Remove from the oven and let cool for 5 minutes or so and then cut and serve :)
YUM!

We opened a storefront!!!

Hey y'all!  Sorry I have been MIA.  Here is what I have been occupied with... opening our first official storefront for our bakery, Half Baked Co.  

We completely gutted and renovated a one bedroom cottage into a legit commercial kitchen, complete with a handicap restroom, state of the art brand new kitchen and totally girly office for consultations :) 

 Hope you can se all the blood, sweat and tears we have poured into this little baby!  I will now be getting back to more regular blogging.
